DIY Recipe: Healthyish CBD Oatmeal Raisin Cookies

Spring season is in full swing. It’s the time of the year when New Year’s resolutions are either still going strong or a distant memory. If you’re looking for a healthy snack that will also satisfy your sweet tooth, then consider an oatmeal raisin cookie infused with cannabidiol (CBD).

With less sugar than chocolate chip cookies, the combination of oats and raisins in this recipe offers more protein and a good source of fiber. Oats in particular are high in beta-glucan, a fiber known to reduce appetite and slow digestion, making them great for weight management.

Raisins are rich in essential minerals including magnesium and potassium, which help maintain muscle health. Raisins also contain polyphenolic phytonutrients, which fight free radicals and thereby help prevent damage to cells.

Makes about 2 dozen cookies**

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup dark brown sugar
  • 1/2 egg
  • 1/2 tsp vanilla extract
  • 1 1/2 cups old fashioned oats
  • 3/4 cup all-purpose flour
  • 1/2 tbsp baking soda
  • 1/2 tsp kosher salt
  • 1/2 cup raisins
  • 1–2 droppers of CBD tincture of your choice*

How to Make CBD Oatmeal Raisin Cookies:

  1. Preheat oven to 350 degrees F.
  2. In a medium-sized bowl, mix butter and sugars together until fluffy. 3. Mix in egg.
  3. Add in vanilla extract.
  4. In a separate large bowl, mix oats, flour, baking soda and salt until blended.
  5. Add your CBD tincture to the butter, sugar, egg and vanilla mixture.
  6. Combine wet ingredients with dry ingredients.
  7. Stir in raisins until mixed evenly.
  8. Scoop out tablespoons of the cookie dough onto an ungreased baking sheet.
  9. Bake for 10–12 minutes or until golden brown.
  10. After baking, let cookies cool for 2–5 minutes before enjoying.

*Feel free to adjust the CBD dose to your liking.

**To make this recipe vegan, substitute butter with a vegan margarine and replace the egg with a ripe banana or flax egg (1 tablespoon ground flaxseed meal mixed with 3 tablespoons water).
