It’s fascinating to see how far we’ve come with edibles infused with marijuana. Edibles have evolved from humble brownies to artisanal creations intended to accommodate the consumer with a more seasoned palate. To keep up, some cannabis companies have expanded into new territories, creating medicated snacks such as marshmallows, truffles, fruit gelees and even popcorn.
This recipe is inspired by the simple edible that started it all: the chocolate chip cookie. If you’ve ever bitten into a cookie and wished it had more chocolate, then this is the recipe for you.
This double chocolate chunk cookie recipe offers two types of chocolate: cocoa and white chocolate. On the surface, this cookie appears sinful—sinfully good, yes—and therefore bad for your health.
However, the addition of cocoa powder brings along some benefits. Cocoa is high in antioxidants, which help improve cardiovascular health, regulate blood sugar and eliminate free radicals in the body. Because of its numerous health benefits, cocoa was used as plant medicine in Mesoamerican civilizations and early Europe.
Of course, when it comes to white chocolate, it’s high in saturated fat since it’s often made with cocoa butter, milk and sugar. But a certain amount of saturated fat is useful when consuming cannabis. (And having one or two cookies won’t ruin your health.) Because cannabis compounds are lipophiles—in other words, fat-loving—they need fats to become bioavailable or accessible in the body.
Although white chocolate isn’t rich in nutrients like cocoa is, the addition of milk provides a dose of calcium to help support strong bones, teeth and muscles. For a slightly healthier white chocolate, opt for the organic or nongenetically modified options.
Cocoa and white chocolate go together like peanut butter and jelly do, making for the ultimate in sensory satisfaction. The combination of bitterness from the cocoa and sweetness from the white chocolate will also help mask the cannabis flavor from the cannabutter.

*This recipe calls for 2 cups of cannabutter, which will result in cookies with a higher potency of THC. If you’re concerned that this is too much, add 1 cup of cannabutter and 1 cup of unsalted butter to reduce the THC content in these cookies.
**If you want to increase the THC content in these cookies, replace the organic white chocolate with a cannabis-infused white chocolate bar.
1.\tPreheat the oven to 350 degrees F. While the oven preheats, begin preparing the cookies. 2.\tIn a large bowl, mix the butter, brown sugar and granulated sugar until light and fluffy. For easier mixing, use an electric mixer with the paddle attachment. 3.\tAdd the vanilla extract to the fluffy sugar mix. 4.\tAdd the eggs and mix until blended in. 5.\tAdd the cocoa powder and mix again. Set aside. 6.\tIn a separate bowl, sift together flour, baking powder, baking soda and salt. 7.\tOnce sifted, add the flour mixture to the cocoa batter until combined. 8.\tFold in the chopped white chocolate chunks until distributed throughout the dough. Set aside once mixed. 9.\tTake a baking sheet and line it with parchment paper. Using an ice cream scoop or rounded tablespoon, scoop out the dough and drop them onto the baking sheet. 10.\tAfter scooping out all of the dough, use a little water to dampen your fingertips and press on the dough to slightly flatten the balls. 11.\tPlace the cookie sheet in the oven and bake for 15 minutes. Be sure to set a timer. 12.\tRemove the cookies from the oven. They may appear underdone, but this is OK. 13.\tLet the cookies cool briefly on the sheet, then transfer to a wire rack to cool completely. 14.\tEnjoy. And try not to eat them all at once!
