Dinner: Cilantro-Lime Cannabis Chicken & Veggie Kebabs

Kebabs are one of the easiest ways to make a gourmet dinner while camping. All of the prep can be done ahead of time, and you don’t need many cooking supplies. Plus, these kebabs can be customized very easily to fit any dietary needs. If someone is vegetarian or vegan, just leave off the meat and/or honey.

6 servings

Ingredients for Cilantro-Lime Cannabis Chicken & Veggie Kebabs

  • 2 lbs boneless and skinless chicken breasts
  • 8 oz box of cherry tomatoes
  • 2 red onions
  • 2 large zucchinis
  • 1/3 cup lime juice (fresh is preferred)
  • 1/2 cup honey
  • 2 tbsp soy sauce (or coconut amino acids if gluten free)
  • 1 tbsp minced garlic
  • 1/2 cup fresh cilantro, roughly chopped
  • 1 tbsp avocado oil
  • 1–2 droppers full of cannabis tincture (customize dose according to group’s tolerance)
  • 1/2 tsp kosher salt
  • 1/3 tsp fresh ground pepper
  • Wooden skewers
  • Gallon-sized freezer bag

How to Make Cilantro-Lime Cannabis Chicken & Veggie Kebabs

  1. Before your trip, prepare all of the ingredients for the skewers so all you’ll have to do is place the meat and veggies onto the wooden sticks. Start by chopping the chicken, onion and zucchinis into even 1-inch pieces.
  2. In a large freezer bag, add the lime juice, honey, soy sauce, garlic, fresh cilantro, avocado oil, cannabis tincture, kosher salt and ground pepper. Then add the chicken and vegetables, including the whole tomatoes.
  3. Shake the bag vigorously until all ingredients are combined. Let this marinate for at least 5 hours before cooking, or ideally overnight. Keep the bag refrigerated until it’s time to cook.
  4. Before cooking, soak the wooden skewers in water for 20 minutes so they don’t burn.
  5. After soaking, pierce the chicken and veggies onto the skewers until all ingredients are used. Place these on a charcoal or campfire grill and pour the remaining marinade over top.
  6. Cook for 15 minutes or until the chicken is completely cooked through.
